L’Auberge de l’Ady à Valady, une heureuse recommandation (Aveyron)

Le hasard fait bien les choses mais je n’aurais pas dû le laisser choisir… en balade à Belcastel, passant devant L’Auberge du Vieux Pont, 1 étoile au Michelin, benoîtement, nous nous sommes imaginés que nous pouvions peut-être demander à être reçus pour le déjeuner. Nous avons été vertement et assez mal poliment renseignés sur le fait que c’était bien sûr complet et qu’il était absolument inutile de laisser nos coordonnées en cas de désistement… car cela n’existait pas ici. Soit.

Alors je me suis rappelée, que non loin, à Valady, une petite auberge avec un Bib m’avait été chaudement recommandée par Jean-Louis, un de mes fidèles lecteurs, et que cela valait le détour, quitte à revenir à Belcastel pour la visite du château (recommandée elle aussi !). Et c’est là que je m’en suis voulue…j’aurais dû y penser avant et c’est moi, aujourd’hui, qui vous incite à aller déjeuner ou dîner à l’Auberge de l’Ady. Et je me rends compte, au passage, que nous aimons de plus en plus les Bib au détriment des restaurants 1 étoile. Pas de regret donc, pour l’Auberge du Vieux Pont. Ici, s’il est question de terroir, c’est bien parce qu’on met en avant les produits du coin (truite du producteurs du village voisin, porc de l’Aveyron, vin local…oui il y a du vin ici !), mais le reste n’est que gastronomique.

Saluons tout d’abord l’excellent rapport qualité-prix. Pour 28€ vous sont servis 2 amuse-bouche, entrée, plat, fromage, dessert et mignardises. Saluons le goût, saluons la présentation des plats, saluons la discrétion et la gentillesse du service, bref, un de nos meilleurs souvenirs de cette semaine passée en Aveyron.

En amuse-bouche nous avons goûté une petite soupe d’oignons et une bouchée façon paëlla. En entrée, David a commencé son menu avec une sorte de mille-feuille rond de maquereaux et langue de veau avec une mousse de bacon tandis que j’ai dégusté une petite raviole de joue de bœuf sur une tranche de pomme pochée au vin rouge local de Marcillac et un sorbet à l’oignon.

La suite pour le gourmand fut un pavé de truite saumonée avec un pressé d’endives au jus d’orange et pour ma part un jarret de porc confit 12 heures, qui se délitait parfaitement, et une galette de chou vert entourant du chou blanc.

Nous avons donc eu du fromage, un petit parallélépipède de fromage de vache au cumin, posé sur un cake aux noix et en dessert, le même choix de la tarte au citron déstructurée à base de lemon curd au Limoncello, de fond de génoise et de meringue citronnée. C’est rare, une photo, et une également pour les mignardises, charmant petit tableau de fin de repas. Cela vous donne une idée du raffinement possible, même à ce prix. Je pense que le chef, Cédric Gaston, se fait plaisir avant tout, car il doit être satisfait de voir partir de si jolies assiettes.

Nous avons pris des vins au verre (5€ chacun) : j’ai voulu goûté un vin typique d’ici, le Marcillac, qui a une AOC en rouge et en rosé. Goût assez simple de cassis, pour le vin de Philippe Teulier, Les Rougiers 2005. Et David un verre du Domaine des Schistes, un Roussillon blanc de 2010 à l’arôme de lie de vin.

Café à la carte : nous avions choisi un Sidamo d’Ethiopie pour 3,3€ chacun…avec petits chocolats !
